Moldy Cheese

Dear daughter bought some fancy cheese at Trader Joe’s for $6.
She said I couldn’t eat it… ok … fair enough…

Two weeks later the cheese is all moldy.  I trimmed away the mold and ate it.  No diarrhea…check!  A-OK!

人日。People’s day.  The end of the one week celebration of the lunar new year.  It the year of the rooster!  

Just think 48 years ago I designed a poster for a Chinatown street fair while I was still in high school.  It changed my life.  It was there that I got involved with the Chinatown community.  I volunteered to help with the community street fair and began utilizing my art skills for the good of the community.

I couldn’t forget that there was a riot on Grant avenue with police in riot gear and people throwing firecrackers and barrel bombs at the police.

The year of the rooster!  恭喜發財!

Leland’s Righteous Pizza

Righteous Pizza Recipe from Honest American Beer and Pizza, Yreka, CA

I envision opening up a redneck pizza and beer joint by Interstate 5 near Yreka, CA. It will be called Honest American. I will have pool tables and a mechanical bucking bronco.

All my featured food will be righteous.
Recipe for the Righteous Pizza
The dough
In a large mixing bowl, dissolve a pack of yeast with a cup of warm water.
Add a tablespoon of sugar, yeast love sugar
About two tablespoons of olive oil
a teaspoon of salt
mix well
add about five cups of flour
Slowly begin mixing
Slowly dd warm water as needed while mixing. I prefer using a bamboo chopstick for mixing. Mix till dough begins to lump out.
Begin kneading the dough. Add water water slowly and sparingly while kneading until the dough is a doughie elastic consistency.
Let dough rest for about ten minutes
Knead dough again till smooth.
Place in large mixing bowl in a warm location preferably, cover and allow dough to rise. Usually about an hour. I let it rise for several hours if I’m in no rush.
and now for the pizza:
cut out a piece of dough the size of a tennis ball. You can vary the amount of dough to your liking…if you want a thinner crust pizza use a small amount of dough. If you want a thicker dough pizza, use a larger amount of dough. This tennis ball size works well for me to make a 12″ to 14″ size thin crust pizza.
On a floured board, roll dough into a ball. Flatten as much as you can with the back part of your palm.
Then use a wooden dowel to flatten the dough into a circle shape or whatever pan shape you are using. At this point you can pick up the whole thing and twirl it in the air. You can stretch it using gravity and the back of your hand. You can pick up a corner and stretch it. You can lightly grease or lightly flour the bottom of the pan so that the pizza won’t stick too hard to the pan. You can also use a non-stick spray. After setting the flattened dough back to your pan, take a fork and lightly poke holes on the dough.
Sauce: the easy way for me is to use spaghetti sauce. It an be any kind to your liking. Spread evenly with the back of a big serving spoon onto the flattened dough on the pan. You can use tomato sauce too.
Cheese: evenly spread a layer of mozzarella cheese over the tomato sauce on the flattened dough.
Sprinkle Italian seasoning. I like to add some garlic powder or really finely chopped garlic. Then drizzle a little olive oil on top. there you have the base. You can add whatever toppings you like.
Here’a a list of what you can add; sausage, pepperoni, mushrooms, chopped onions, bell peppers, jalapenos (my favorite), olives and anything that tastes good to you.
Bake in oven or toaster oven is it fits set to 450-500 degrees. It takes about fifteen minutes…when you see the cheese and sauce boiling and the pizza is golden brown it should be ready. Enjoy!!!
