I wanted to try making dumplings using lamb meat for a long time. I had it before last year in flushing New York in the golden arcade. It was made with cumin and it was good!I got a five pound boneless leg of lamb at Costco.
1-1/2 tablespoon of salt
2 teaspoons of white pepper
1-1/2 tablespoons of granulated garlic,
1 tablespoon of sesame seed oil
2 tablespoons of corn starch
4 tablespoon of Shaoxing wine
2 tablespoon of soy sauce
2 tablespoons of cumin
1 tablespoon of minced ginger
2 teaspoons black pepper
1 teaspoon sugar
2 cups chopped cilantro
4 cups napa cabbage (water squeezed out with salt)
4 cups chopped celery
Fried and steamed dumplings in pan.
Dipping sauce made with black vinegar, soy sauce, sesame seed oil and chili paste.
